Pam Eudaric’s Chocolate Secrets

Biting into one of Pam Eudaric’s premium chocolates is pure euphoria. One of her sensational macarons or a slice of her sea salt caramel cake is a gastronomical experience that will totally delight. But, what’s more delightful is this chocolatier’s story – from growing up on a small island in the Caribbean to getting a National Merit Scholarship to Rice University to graduating with a law degree from University of Texas at Austin to working at a big-time law firm in Dallas, Texas to becoming a chocolate entrepreneur (and adding wine, food, French lessons and jazz to the mix)!!!
Meet Pam Eudaric
Pam Eudaric grew up on the island of St. Croix. She was totally unaware that the test her teacher made the class take one day would lead to a full scholarship to Rice University. Then, she went on to law school after which Pam moved to Dallas to “follow a cute guy,” as she put it. After 20 years as a highly successful attorney and as a mom of three sons, Pam decided to pursue her love of chocolate, which she says is really a passion for being with and connecting more with people.
Now, it’s been 10 years of chocolate making and she’s experienced double-digit growth each year. Pam makes all of her chocolates at her facility with the exception of a few imported from France. Her chocolatiers are some of the most creative in the business, enabling Pam to win various awards over the years for “Best Chocolate Indulgence,” among others. And all of her chocolates are made with the finest organic and natural ingredients, meaning no wax or preservatives.
If you are lucky enough to live in Dallas, Texas, you can run by her store on Oak Lawn and enjoy chocolates, ice creams, cakes, pastries, coffees, wines and even enjoy jazz performances on Friday and Saturday nights. Or, you can come for free French lessons during the week. If you don’t live in Dallas, the great news is that you can order her chocolates from her website. Pam and her staff also create custom chocolates – high heels, cowboy boots, footballs, Buddhas – as well as chocolates with company logos or messages, along with custom packaging. She has designed special concoctions for the Gaylord Texan, Harry Winston, Tom Ford, Omni Hotels & Resorts and the Perot Museum of Nature and Science.
Health Benefits of All-natural Chocolate
Pam knows well the health benefits of organic, all-natural chocolate as she lost 70 pounds eating a piece of chocolate in the morning and a piece before and after lunch and dinner to suppress her appetite. She said “it just sort of happened that I wasn’t as hungry after eating a piece of chocolate.” Research now proves that eating chocolate 20 minutes before and five minutes after lunch and dinner can cut your appetite by up to 50 percent! This only works if you reach for dark chocolate (at least 70 percent cacao) and a piece no bigger than the end of your thumb – just the size of Pam’s chocolates.
The flavors of her chocolates, macarons, truffles, etc. are amazing – ancho chile, bananas foster, coconut lime, brandied cherry, toffee yums, dark chocolate banana peanut butter cup, etc. One of the most indulgent is the organic candied Black Forest bacon in dark chocolate ganache with a pink flying pig painted on each piece! The bbq potato chip chocolate slate is pretty special as well.
